Ingredients

  • 4 Wandering Hen Eggs
  • 1/4 cup celery, chopped
  • 1/4 cup green pepper, chopped
  • 1/4 cup onion, chopped
  • 1/4 cup mayonnaise, fat-free
  • 1 tablespoon Dijon mustard
  • 1 teaspoon cider vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon white pepper

Preparation

Bring eggs to room temperature then place the eggs in room temperature water; bring to a boil then turn down to a low boil for 12 minutes. Quickly chill the eggs in ice cold water before peeling.

Chop Wandering Hen Free-Range hard-cooked eggs.

Add the rest of the ingredients and mix well.

Divide into equal portions and serve in a sandwich or as a salad on lettuce.
