Ingredients

  • 2 The Wandering Hen™ Free-Range Eggs
  • 1 round roll
  • 8 oz lean ground turkey, divided
  • 2 slices tomato
  • 2 leaves romaine lettuce
  • 2 slices, red onion
  • 1 tablespoon dijon mustard, divided

Preparation

Split a round roll and toast until golden brown; cool completely and spread with dijon mustard; set aside.

In a medium size nonstick skillet, prepare two 4-ounce turkey burgers, adding salt, pepper or your favorite seasonings; cooking for approximately 4-5 minutes on each side over high heat.

In another large skillet over medium-high heat, crack two eggs and cook until whites are cooked through and yolks are firm, for approximately 4-5 minutes.

To assemble burger, top each side of the round roll with lettuce, tomato, and the turkey burger, carefully laying 1 egg on top of each.
